OLD WORLD ITALIAN FOOD!
paste in 12 oz. cans, use 4 cans.
HUNTS : Tomato paste
in 6 oz. cans, use 8 cans.
either Hunts or Contadina. Your choice, but do not mix brand names.
** You may use either fresh or canned TOMATOES. Amount is
about 2 qt. Cans of Hunts canned tomatoes.
** WATER: 12 oz. of
water to each 6 oz . of paste.
** 1/4 Tsp. Garlic salt.
** 1 Tsp. Sweet Basil.
** 1/4 Tsp. Oregano
** 1 Tbs. salt ( heaping
** 1/2 Tsp. Baking Soda
( to control acid in tomatoes)
** 1/4 Tsp. Black
** 1/4 of fresh green
pepper. (if in season)
** 1 Bay leaf (large
leaf or use 2-3 small to medium leafs)
** MEAT: Can use any of
the following :
Spare ribs, pork shoulder, pork roast, pork blades,
boneless beef chuck or rump.
Approximately 2 lb. Pork and 2 lb. Beef.
BROWN meat in a large sauce pot having a tight
cover, with 1/4 cup of olive oil over medium heat. Occasionally move meat
Add 1/2 cup (1 medium size ) fresh chopped onion.
Put tomato and paste in large sauce pan and add
COOK 3 1/2 TO 4 HOURS.
If using ribs add them in the last hour of cooking.
USE SLOW HEAT. SLOW COOKING SO THAT MEAT AND SAUCE
WILL NOT BURN.
Can use this sauce on any pasta or pizza.
