OLD WORLD ITALIAN FOOD! SPAGHETTI SAUCE Ingredients: Tomato
paste in 12 oz. cans, use 4 cans. Tomato paste
in 6 oz. cans, use 8 cans. CONTADINA brand paste (Use either Hunts or Contadina.
Your choice, but do not mix brand names.
You may use either fresh or canned TOMATOES. Amount is about
two (2) quart cans of Hunts canned tomatoes.
WATER: ** 1/4 Teaspoon Garlic salt. ** 1 Teaspoon Sweet Basil. ** 1/4 Teaspoon Oregano ** 1 Tablespoon salt ( heaping
) ** 1/2 Teaspoon Baking Soda
( to control acid in tomatoes) ** 1/4 Teaspoon Black
pepper. ** 1/4 of fresh green
pepper. (if in season) ** 1 Bay leaf (large
leaf or use 2-3 small to medium leafs) ** MEAT: Can use any of
the following:
Spare ribs, pork shoulder, pork roast, pork blades,
boneless beef chuck or rump.
Approximately 2 pounds Pork and 2 pounds Beef. BROWN meat in a large sauce pot having a tight
cover, with 1/4 cup of olive oil over medium heat. Occasionally move meat
around. Put tomato and paste in the large sauce pan and add
other ingredients. COOK 3 1/2 TO 4 HOURS. If using ribs add them in the last hour of cooking. USE SLOW HEAT. SLOW COOKING SO THAT MEAT AND
SAUCE WILL NOT BURN. STIR OFTEN Can use this sauce on any pasta.
